Palak Aaloo Recipe

I never liked spinach growing up. It was one of those vegetables that made me gag; the smell, the sight, I was convinced that I wasn’t getting any muscles from spinach any time soon and Popeye could have it all.

Fast forward to 2011 when I was pregnant with my first child and border line anaemic. Suddenly all my body would crave would be spinach, beetroot and apples; all items that were high in iron.

That was the beginning of my love relationship with spinach and I haven’t looked back since. I add it to most dishes and incorporate it in my meals almost daily; from smoothies, to yoghurt dips, to meat dishes.

The real favourite comfort food though is palak aaloo kii sabzi (spinach and potatoes).

This aromatic and flavourful dish is a Pakistani favourite and is often served with warm rice and naan or chapati. It comes together in minutes, just as long as it takes for the potatoes to tenderise, and you can enjoy this simple dish sooner rather than later.

Prep Time: 15 mins

Cook Time: 30 mins

Serves: 6-8

  • 3 tbsp cooking oil
  • 3 medium sized potatoes, peeled and cut into cubes (soak in water until ready to use so that they don’t blacken)
  • 1 bunch of spinach, washed and cut
  • 2 tomatoes diced
  • 1 tsp garlic paste
  • 1 tsp methi dana (mustard seed)
  • 1/2 tsp salt
  • 1/4 tsp turmeric pwd
  • 1/4 tsp red chilli flakes
  • 2 whole red chillies
  • 2 green chillies
  • Heat oil in a pan on medium heat.
  • Add whole green and red chillies along with methi dana. Stir fry until fragrant.
  • Add your garlic paste and stir fry for another 30 seconds.
  • Add diced tomatoes, salt, turmeric pwd and chilli flakes. Stir fry until the oil separates.
  • Add potatoes and stir fry for 30 – 45 seconds.
  • Add spinach (I had some frozen, you can use fresh). 
  • Stir fry well and cover, leaving on low heat to cook through. Approximately 20-30 mins. 
  • Uncover and check the tenderness of your potatoes. If done then cook down excess water until oil separates again.
  • Serve warm and enjoy!
